CAST: A Global Leader in Italian Cuisine Training

“Exploring Italian Cuisine: Typical Products, History, and Culture” this is the title of a series of educational webinars developed by CAST, showcasing its expertise in Italian culinary training to an international audience.

This innovative project, created in collaboration with ITA (Italian Trade Agency), is part of the IX edition of the “Week of Italian Cuisine in the World”. This year’s theme, Mediterranean Diet and Roots Cuisine: Health and Tradition, highlights the rich cultural heritage and health benefits of Italian cuisine.

CAST’s initiative underscores its commitment to fostering international culinary education and promoting authentic Italian gastronomic culture globally. The webinars brought together a diverse audience of students, educators, and professionals from culinary schools in India, Bangladesh and Sri Lanka, Indian retailers and the large-scale retail sector.

Participants were introduced to the intricate tapestry of Italian food traditions and biodiversity, exploring iconic ingredients such as E.V.O. olive oil, tomatoes, basil, pesto, pasta, pizza, cured meats, and typical cheeses. Beyond their culinary applications, the webinars also delved into product management, emphasizing storage, storytelling, and market strategies tailored for the large-scale retail (GDO) sector.

The training sessions were expertly led by Chef Armando Palmieri, a distinguished member of CAST’s faculty and a renowned authority in cuisine and pastry arts. His insightful guidance enriched participants’ understanding of Italian gastronomy, blending tradition with modern practices.

This initiative reinforces CAST’s growing reputation as a global leader in culinary training, sharing the essence of Italian cuisine with the world. By merging tradition, innovation, and education, CAST continues to empower professionals and inspire a deeper appreciation for the artistry and culture of Italian gastronomy.
